My fiancee and I stayed at the Fairmont Princess for a wedding in May 2006. Along with some of the other reviews, the Fairmont is a little dated, the rooms are very "1970s." That said, the hotel grounds were wonderful and well kept. Our room was large with a nice ocean view balcony. We had some friends staying at Las Brisas hotel and the Fairmont was definitely much nicer.
The food at the resort was okay. We only had breakfast on the resort - there are many nice restruants in Acapulco, many literally built into the side of the cliffs that surround Acapulco Bay. I've attached a picture of one of the restruants (sorry I don't remember it's name). I would highly recommend taking a couple of trips into Acapulco to sample some of the nice restruants there.
The beach at the Fairmont was nice, with a roped off area to reduce the number of vendors offering sales to the hotel guests on the beach. It apperared that they would only let one or maybe two vendors into the roped off area at any one time. However, to get to the water you have to exit the roped area and several vendors will be waiting. The vendors were all nice and polite no was usually enough. On the beach, there were lots of huts to offer shade with plenty of chairs for everyone. Service on the beach was a bit slow - but that's to be expected. The beach was clean, the water warm though a bit rough for some. The Fairmont beach is located on the Pacific Ocean and not in the protected waters of Acapulco Bay.
As for Acapulco itself, it is a much larger city than I realized. We had estimates of a population from 1.5 to 2 million people. There is quite a contrast in Acapulco (as is true of the rest of Mexico) between poverty and luxury. If you venture off the resort, you'll certainly notice poverty. Acapulco is a large natural bay. The Fairmont Princess is located approximately 20 minutes by cab from "downtown" Acapulco and about 30 minutes by cab to the famed cliff divers. I definitely recommend checking out the cliff divers over dinner one night.
Overall, the Princess was nice and affordable. I would recommend it to those looking for a 3-4 night vacation. Anything longer and you might run out of things to do. For a short trip it was great!
