When I asked Serbian colleagues about booking a hotel in Belgrade, the answer was "The Hyatt is THE place to stay in Belgrade."
The Hyatt is possibly the grandest place to stay in Belgrade, but it is a hotel geared for business travel. It's decked out with all the modern amenities and facilities a business traveler would demand, including a 24-hour money exchange office and ATM. The rooms, while not breathtaking, are certainly up to the standard you'd expect of an international-class five star hotel. I also found the service to be close to impeccable, from the assistance from the concierge, the transportation desk, and especially at the excellent restaurant (note, however, that excellent and lavish meals are to be had in old Belgrade for approximately half the price of those at the Hyatt).
The one quibble I have is the Hyatt's location. It sits in the district of New Belgrade, about a 10 to 15 minute cab ride from most destinations in Old Belgrade, which holds considerably more interest. It took me 30 minutes or so to walk to Knez Mihailova, the main shopping street - but you'd probably not want to do this on a daily basis, as part of the route follows a heavily congested and polluted major artery. If you are traveling (as I was) on business this will not be a major issue, as it is extremely easy to catch a taxi from the Hyatt, but otherwise the location should give you pause.
If I were traveling to Belgrade on business, I would choose the Hyatt in a heartbeat, but if I were returning there as a tourist, I would opt instead for a hotel in Old Belgrade.
